This sweet heat chocolate flight, also referred to as "swicy," blends sweetness with tart and a delayed, moderate chili pepper or spice kick layered over different strengths of cacao. The result is an immediate sweet sensation followed by a warm, lingering finish.
Flavors:
Thai Chili Peanut (dark): Inspired by Thai cuisine, deep cacao notes are immediately followed by a sweet-tangy brightness, soft spice, then a warm, lingering heat. Tamarind lends a savory twist, peanuts add crunch, and basil brightens a rich, fudgy, fruit-forward finish.
Spicy Pineapple (milk): Leading with a high cocoa content milk chocolate with a lot of character, it’s gently interrupted by tart pineapple then highlighted by cayenne pepper, and a dash of sea salt. The result is sweet, tangy, and smoky-hot where the pineapple's acidity cuts through any bitterness of the chocolate.
Cayenne Veracruz Orange (white): A sliced, fresh orange with a light dusting of chili powder is a local delicacy in the Yucatán and is the inspiration for this surprising and delicious bar.
